1 small red chili, chopped fine ½
grated ginger A few drops of sesame oil
0k. 60g. (1 / 4 cup) of spinach
orange peel for garnish
The Heat frying pan over medium heat. Fry the duck breast, by 10-12 min. rolling, at a time, until meat is pink in the middle. Put the breasts on cutting board. In the meantime, prepare the dressing.
In a bowl, mix together the fish sauce, lime juice, orange juice, chili, cinnamon and sesame oil. Mix everything with a spoon. On a plate lay off the spinach. Breast cut into strips. Juices, which escaped from a duck add to dressing. Strips of meat dressing and toss to mix well with hands. Place the duck on spinach leaves. Sprinkle with orange peel and serve immediately.
